Cilantro Lime Coleslaw

Serves 6 (1 cup per serving)

Ingredients

  • 4 cups thinly sliced green cabbage
  • 1 cup red bell pepper, sliced
  • 1 cup carrot, grated
  • 2 green onions, sliced
  • ¼ cup fresh chopped cilantro
  • 3 tbsp lime juice
  • 1 tbsp canola oil
  • 2 tsp granulated sugar or honey
  • ½ tsp salt
  • 1 tsp chili powder
  • ½ tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp chili flakes

Preparation

  1. In a medium bowl combine coleslaw mix, pepper, carrot, green onions and cilantro. Set aside.
  2. To prepare dressing, whisk together lime juice, oil, sugar, salt, chili powder, cumin, garlic powder and chili flakes in a small bowl.
  3. Pour dressing over coleslaw mix and toss to combine. Enjoy!
