Jamaican Black-Eyed Pea Curry
Makes 4 servings (1½ cups per serving)
Ingredients
- 1 tsp vegetable oil
- 1 cup diced onion
- 4 cloves minced garlic
- 1 habanero pepper, minced (seeds removed if you want less heat)
- 2 tbsp fresh chopped thyme
- 2 tsp cumin
- 1 tsp dry mustard
- 1 tsp ground coriander
- 1 tsp ground fenugreek
- ½ tsp allspice
- 1 tsp ground ginger
- 2 tsp turmeric
- 1½ cups carrots, peeled and diced
- 1½ cups chopped cauliflower
- 2 cups canned black eyed peas, no salt added, drained and rinsed
- 2 cups water
- 1 can coconut milk
- 1 lime, juiced
Preparation
- Combine all ingredients except lime juice in a slow cooker.
- Cook on low for 8 hours.
- Just before serving, sprinkle with fresh lime juice.
- Serve and enjoy!
