Jamaican Black-Eyed Pea Curry

Makes 4 servings (1½ cups per serving)

Ingredients

  • 1 tsp vegetable oil
  • 1 cup diced onion
  • 4 cloves minced garlic
  • 1 habanero pepper, minced (seeds removed if you want less heat)
  • 2 tbsp fresh chopped thyme
  • 2 tsp cumin
  • 1 tsp dry mustard
  • 1 tsp ground coriander
  • 1 tsp ground fenugreek
  • ½ tsp allspice
  • 1 tsp ground ginger
  • 2 tsp turmeric
  • 1½ cups carrots, peeled and diced
  • 1½ cups chopped cauliflower
  • 2 cups canned black eyed peas, no salt added, drained and rinsed
  • 2 cups water
  • 1 can coconut milk
  • 1 lime, juiced

 

Preparation

  1. Combine all ingredients except lime juice in a slow cooker.
  2. Cook on low for 8 hours.
  3. Just before serving, sprinkle with fresh lime juice.
  4. Serve and enjoy!
