Marinated Chickpeas

Serves 6
Ingredients
- ¼ cup olive oil
- 1/3 cup fresh lemon juice
- 2 tsp Dijon mustard
- ¼ tsp red pepper flakes
- 2 cans (540 mL/19 oz each) chickpeas, drained and rinsed (4 cups)
- 1 small shallot, finely minced (about 2 tbsp)
- 1 clove minced garlic (about 2 tsp)
- 2 tsp maple syrup
- ¼ tsp salt
- ¼ tsp pepper
Preparation
- In a large bowl, whisk all ingredients except chickpeas until combined. Add chickpeas and stir well to coat with marinade.
- Refrigerate overnight, stirring occasionally to redistribute marinade.
