Marinated Chickpeas

Serves 6

Ingredients

  • ¼ cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 tsp Dijon mustard
  • ¼ tsp red pepper flakes
  • 2 cans (540 mL/19 oz each) chickpeas, drained and rinsed (4 cups)
  • 1 small shallot, finely minced (about 2 tbsp)
  • 1 clove minced garlic (about 2 tsp)
  • 2 tsp maple syrup
  • ¼ tsp salt
  • ¼ tsp pepper

Preparation

  1. In a large bowl, whisk all ingredients except chickpeas until combined. Add chickpeas and stir well to coat with marinade.
  2. Refrigerate overnight, stirring occasionally to redistribute marinade.
