Chickpea Noodle Soup
Makes 4 servings (1 ½ cup per serving)
Ingredients
- 1 tsp. vegetable oil
- 1 cup onion, diced
- 1 cup carrot, peeled and diced
- 1 cup celery, diced
- 1 clove garlic, minced
- 1 tsp. parsley
- 1 tsp. thyme
- 1 tsp. basil
- 1 tsp. oregano
- 1 bay leaf
- 6 cups vegetable stock
- 1 can chickpeas, low sodium, drained and rinsed
- 1 cup noodles, uncooked
Preparation
- Heat oil in a pot, add onions, carrots and celery.
- Cook for 5 minutes, then add garlic, parsley, thyme, basil, oregano and bay leaf.
- Cook for 2 minutes, then pour in vegetable stock.
- Bring to a boil, then reduce to a simmer. Cook for 5 minutes, then add noodles.
- Allow the noodles to fully cook, then pour in chickpeas.
- Serve and Enjoy!
