Chickpea Salad
Serves 6 (1 cup per serving)
Ingredients
- 2 tbsp olive oil
- 3 tbsp fresh lemon juice
- 2 tsp lemon zest
- 1 clove minced garlic
- 1/4 tsp salt
- 1/2 tsp pepper
- 2 cups cherry tomatoes, halved
- 2 cups diced cucumber
- 1 can (540 mL) chickpeas, low sodium, drained and rinsed
- ½ cup finely diced red onion
- 1 avocado, diced
- ¼ cup fresh chopped basil
- ¼ cup crumbled feta cheese
Preparation
- Combine all ingredients in a large bowl. Let sit at least 10 minutes before serving.
