Chickpea Salad

Serves 6 (1 cup per serving)

Ingredients

  • 2 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 2 tsp lemon zest
  • 1 clove minced garlic
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 2 cups cherry tomatoes, halved
  • 2 cups diced cucumber
  • 1 can (540 mL) chickpeas, low sodium, drained and rinsed
  • ½ cup finely diced red onion
  • 1 avocado, diced
  • ¼ cup fresh chopped basil
  • ¼ cup crumbled feta cheese

Preparation

  1. Combine all ingredients in a large bowl. Let sit at least 10 minutes before serving.
  2. Serve and Enjoy!
