Blueberry Broccoli Salad

Makes 4 servings (1 1/2 cups per serving)

Ingredients

  • 3 cups broccoli florets
  • 2 cups spinach 
  • ½ cup diced red onion
  • 1 cup blueberries 
  • ¼ cup dried cranberries 
  • 1/4 cup pumpkin seeds 
  • 1/4 cup feta cheese, crumbled 

Dressing: 

  • ½ cup plain Greek yogurt 
  • 1 tbsp honey 
  • 1 tbsp poppy seeds 
  • 1 tsp white vinegar 
  • 1 tsp lemon juice 
  • 1 tsp Dijon mustard 
  • 1 tsp onion powder 
  • 1 tsp garlic powder 
  • 1 tsp black pepper 
  • 1 tsp salt

Preparation

  1. In a small bowl, whisk together all dressing ingredients until combined.  Add 1 tbsp water if consistency is too thick.  
  2. In a large bowl, combine broccoli, spinach, onion, blueberries, dried cranberries and pumpkin seeds. Add dressing and toss to coat.
  3. Sprinkle with feta cheese.  
  4. Serve and enjoy!
