Blueberry Broccoli Salad
Makes 4 servings (1 1/2 cups per serving)
Ingredients
- 3 cups broccoli florets
- 2 cups spinach
- ½ cup diced red onion
- 1 cup blueberries
- ¼ cup dried cranberries
- 1/4 cup pumpkin seeds
- 1/4 cup feta cheese, crumbled
Dressing:
- ½ cup plain Greek yogurt
- 1 tbsp honey
- 1 tbsp poppy seeds
- 1 tsp white vinegar
- 1 tsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
Preparation
- In a small bowl, whisk together all dressing ingredients until combined. Add 1 tbsp water if consistency is too thick.
- In a large bowl, combine broccoli, spinach, onion, blueberries, dried cranberries and pumpkin seeds. Add dressing and toss to coat.
- Sprinkle with feta cheese.
- Serve and enjoy!
