Cilantro Lime Coleslaw
Serves 6 (1 cup per serving)
Ingredients
- 4 cups thinly sliced green cabbage
- 1 cup red bell pepper, sliced
- 1 cup carrot, grated
- 2 green onions, sliced
- ¼ cup fresh chopped cilantro
- 3 tbsp lime juice
- 1 tbsp canola oil
- 2 tsp granulated sugar or honey
- ½ tsp salt
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp garlic powder
- ¼ tsp chili flakes
Preparation
- In a medium bowl combine coleslaw mix, pepper, carrot, green onions and cilantro. Set aside.
- To prepare dressing, whisk together lime juice, oil, sugar, salt, chili powder, cumin, garlic powder and chili flakes in a small bowl.
- Pour dressing over coleslaw mix and toss to combine. Enjoy!
