Coconut Pancakes
Makes 2 servings (2 pancakes per serving)
Ingredients
- 1 tsp coconut oil
- 1 medium banana
- ½ cup unsweetened shredded coconut
- 1 large egg
- 2 large egg whites (about 1/4 cup)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Coconut oil, for cooking
Preparation
- Add all ingredients to a blender or food processor. Purée until smooth.
- In a medium non-stick pan, heat coconut oil over medium heat. Cook pancakes until golden brown and cooked through, about 2 – 3 minutes per side . Enjoy!
