Lemon Lentil Salmon Salad

Makes 4 servings (1 ½ cups per serving)

Ingredients

  • 3 tbsp fresh lemon juice 
  • 1 tbsp fresh chopped dill
  • 1 tsp Dijon mustard 
  • 1 tsp garlic powder 
  • 1 tsp freshly ground pepper 
  • 1 tbsp olive oil 
  • 1 cup diced red bell pepper
  • 1 cup diced cucumber
  • ½ cup finely chopped red onion
  • 2 cups canned lentils, drained and rinsed 
  • 8 oz salmon fillet, cooked (or 1 can (213 g) salmon, drained and flaked)

Preparation

  1. In a large bowl, whisk together lemon juice, dill, mustard, garlic powder and pepper. Slowly add olive oil and whisk to combine. 
  2. Add bell pepper, cucumber, onion, lentils and salmon. Toss to coat. Serve and enjoy!
