Mashed Maple Squash
Makes 4 servings (½ cup per serving)
Ingredients
- 1 large acorn squash, halved and seeded
- 1 tbsp pure maple syrup
- 4 tsp salted butter
- ½ tsp cinnamon
- Dash nutmeg
Preparation
- Preheat oven to 400°F. Place squash halves cut side down on a lightly greased pan.
- Bake until tender when pierced with a fork, about 40 – 50 minutes.
- Scrape the flesh into a medium bowl. Add syrup, butter, cinnamon, nutmeg and mash until mixture is smooth.
- Serve and enjoy!
