Pineapple Avocado Salsa
Serves 6 (½ cup per serving)
Ingredients
- 1 cup diced fresh pineapple
- 1 cup diced fresh tomato
- 1 cup diced avocado
- 2 tbsp minced red onion
- 1 tbsp minced jalapeno pepper
- 2 tbsp chopped fresh cilantro
- 1 tbsp chopped fresh mint
- 1 tbsp lime juice
- ¼ tsp salt
Preparation
- In a medium bowl, combine pineapple, tomato, avocado, red onion, jalapeno, cilantro, mint, lime juice and salt.
- Serve with tortilla chips or use as a topping on fish tacos. Enjoy!
