Watermelon Salad
Makes 4 servings (¾ cup per serving)
Ingredients
- 3 cups chopped seedless watermelon
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- ½ tsp fresh ground black pepper
- Dash salt
- ½ cup crumbled feta cheese
- 2 tbsp fresh chopped mint
Preparation
- Add watermelon, lime juice, lime zest, salt and pepper in a medium bowl. Stir gently to combine.
- Sprinkle with feta cheese and fresh mint.
- Serve and enjoy!
