Grilled Eggplant Rounds

 Makes 4 servings (1 eggplant round per serving)


  • 1 large globe-shaped eggplant, sliced into 1/2 inch thick rounds
  • 4 tsp olive oil 
  • Salt and pepper to taste


  1. Preheat barbecue over medium heat.
  2. Brush both sides of eggplant rounds with oil and season with salt and pepper. Make sure there is enough oil on the rounds to prevent sticking to the grill. 
  3. Grill on both sides until eggplant is tender, about 3 – 5 minutes per side. 

Tip: Grilled eggplant rounds make a great bun option for turkey, chicken, beef or vegetarian patties!
