Protein Zoats
Makes 1 serving
Ingredients
- ¼ cup rolled oats
- 1 tbsp ground flaxseed
- 1 cup water
- 1 cup grated zucchini
- 2 large egg whites
- ½ scoop vanilla whey protein isolate powder
- ½ tsp cinnamon
- ½ large banana, sliced
Preparation
- Add oats, flaxseed, water and zucchini to a medium saucepan over medium-high heat. Cook, stirring frequently, until simmering, about 4 – 5 minutes.
- Remove pan from heat and whisk egg whites into oats vigorously to avoid scrambling the egg whites. Return pan to medium heat and cook, stirring, until mixture is thickened, about 2 – 3 minutes.
- Remove from heat and stir in protein powder and cinnamon. Top with banana slices.
- Serve and enjoy!
