Protein Zoats

Makes 1 serving

Ingredients

  • ¼ cup rolled oats 
  • 1 tbsp ground flaxseed 
  • 1 cup water 
  • 1 cup grated zucchini
  • 2 large egg whites 
  • ½ scoop vanilla whey protein isolate powder
  • ½ tsp cinnamon 
  • ½ large banana, sliced

Preparation

  1. Add oats, flaxseed, water and zucchini to a medium saucepan over medium-high heat. Cook, stirring frequently, until simmering, about 4 – 5 minutes.
  2. Remove pan from heat and whisk egg whites into oats vigorously to avoid scrambling the egg whites. Return pan to medium heat and cook, stirring, until mixture is thickened, about 2 – 3 minutes.
  3. Remove from heat and stir in protein powder and cinnamon. Top with banana slices.
  4. Serve and enjoy!
