Avocado Yogurt Pudding
                    Makes 1 serving
Ingredients
- ¼ ripe medium avocado
 - ¾ cup nonfat vanilla Greek yogurt
 - ¼ cup nonfat plain Greek yogurt
 - ¼ cup milk (1%)
 - ½ tsp vanilla extract
 - ¼ cup granola (or sliced almonds)
 - cinnamon, to taste
 
Preparation
- Combine avocado, yogurt, milk and vanilla in a blender. Purée until smooth.
 - Transfer mixture into two jars, dividing equally.
 - Cover and and refrigerate overnight. Just before serving, sprinkle with granola and cinnamon.
 - Serve and enjoy!
